Perfect as a light pudding or a refreshing snack, these frozen lollipops are especially satisfying on a hot summer's day.
This recipe was inspired by my Frozen Banana and Coconut Dessert, which many of you enjoyed. The idea is just as quick and fuss-free: whip up a batch in minutes, pop them in the freezer and in 5-6 hours you'll have creamy, crunchy, fruity lollipops ready to enjoy.

To keep things simple, I use just a handful of ingredients - each adding its own texture and taste:
Banana - chopped into small pieces for natural sweetness and softness.
Greek yoghurt - I always use full-cream Greek yoghurt for a rich, creamy texture.
Honey - just a drizzle to add a gentle sweetness.
Roasted and salted peanuts - for a crunch and a little savoury contrast.
Roasted coconut flakes - lightly chewy, with a toasty nutty flavour that pairs beautifully with banana.
How to make Banana Yoghurt Lollies
You'll be surprised at how quick and easy these are to prepare.
Start by mixing the chopped bananas, Greek yoghurt and honey in a bowl. Prepare the peanuts and coconut in two separate bowls, this makes it easier when you assemble the lollipops.
I find silicone lollipop moulds work best. To make things less messy, I put the yoghurt mixture into a piping bag with a wide opening so the banana pieces can slide through easily. If you don't have a piping bag, a spoon works just as well.
Pipe or spoon a layer of the yoghurt mixture into each mould, then sprinkle in some peanuts and coconut flakes. Add another layer of yoghurt mixture, followed by more peanuts and coconut. Continue layering until the moulds are filled.
Close the moulds, insert the sticks and place them in the freezer for 5-6 hours until fully set. If you're freezing them overnight, let them sit at room temperature for a couple minutes before serving so they soften slightly.

500g full-cream Greek yoghurt
2tablespoons honey (adjust to taste)
70g roasted and salted peanuts
50g roasted coconut flakes
