A stir-fry that works with what you have
One of the best things about this Pork Mince Noodle Stir-Fry is how flexible it is.
No pork mince? No problem
You can easily swap the pork mince for pork shoulder, chicken, beef, prawns or even tofu. Use what you enjoy or what you already have, this dish works beautifully with any of them.
Which noodles to use?
I prefer flat rice noodles, the same type I use for my Chicken Pho and Beef Pho Noodle recipes. Their chewy texture is really satisfying and holds up well in stir-fries. That said, if round rice noodles are easier for you to find, they'll work just as well.
A colourful mix of vegetables
My go-to veg
I usually go for a mix of:
Choi sum
Julienned carrot
Sliced red pepper
Onion wedges
Shredded woodear mushrooms (after soaking in hot water for 10 minutes)
This combination gives the dish a great mix of colours and textures and the crunchy woodier mushrooms add something a little unexpected and fun.
Feel free to improvise
Don't worry if you don't have the exact vegetables I've listed. This easy noodle recipe is all about working with what you've got - cabbage, broccoli, cauliflower, green beans...they'll all fit right in.
The sauce that brings it all together
Let's not skip over the sauce, it's the glue that ties everything in this Pork Mince Noodle Stir-Fry together.
It is made from:
Oyster sauce
Soy sauce
A dash of honey
A little sesame oil
It's savoury, slightly sweet and full of umami, the kind of flavour that makes you want just one more bite. I like to mix it up in a small bowl ahead of time so it's ready to pour in when I need it.
How to cook Pork Mince Noodle Stir-Fry
Here's how I pull this dish together in under 30 minutes:
Cook the pork mince
Heat a tablespoon of olive oil in a large frying pan over medium-high heat. Add half the minced garlic and fry until golden and fragrant. Add the pork mince and break it up with a wooden spoon. Stir-fry for about 5 minutes until it stats to brown, then add a tablespoon of soy sauce. Reduce heat to simmer for another 5 minutes, then remove to a clean bowl and set aside.
Prepare the noodles
While the pork is cooking, boil a full kettle. Pour the boiling water over your dry flat noodles in a large pot, cover with a lid and let them soak for 3 minutes. Then rinse under cold tap water to stop the cooking process, drain well and set aside.
Stir-fry the vegetables
In the same pan used for the pork, heat a couple of tablespoons of olive oil. Add the remaining minced garlic and the sliced onion wedges. Stir-fry until fragrant. Add all the prepared vegetables - woodier mushroom carrots, choi sum and red pepper. Stir in half of your prepared sauce and stir everything together for a minute or two.
Add sauce and noodles
Add the softened noodles and the remaining sauce. Mix thoroughly to coat everything well and stir fry for another minute to allow the noodles to absorb the flavours.
Bring it all together
Return the cooked pork mine to the pan. Give everything a good final stir and let it heat through for another minute. That's it. Dinner is done!

Ingredients
For the stir-fry
400g pork mince
400g dried flat rice noodles (1 pack)
1large onion (cut into wedges)
3cloves garlic (minced)
1 carrot (julienned)
1 red pepper (sliced)
1bunch choi sum (chopped)
3 dried woodier mushrooms (soaked in hot water for 10 minutes and shredded)
3tablespoons olive oil
For the sauce
1tablespoon oyster sauce
3tablespoons soy sauce, dark or light (1 for stir frying the pork mince, 2 for the sauce mixture)
1teaspoon honey
1tablespoon sesame oil
To serve
Sriracha
Roasted peanuts
Fried shallots
Instructions

Soak the noodles
Boil a full kettle. Place the dried noodles in a large bowl or pot, pour over the boiling water, cover and soak for 3 minutes.
Drain and rinse under cold water to stop the cooking process.
Set aside.

Cook the pork mince
Heat 1 tablespoon olive oil in a large frying pan over medium-high heat.
Add half the garlic and cook until fragrant.
Add the pork mince, break up any lumps and stir-fry for 5 minutes.
Add 1 tablespoon soy sauce and simmer for another 5 minutes until cooked through.
Transfer to a bowl and set aside.

Stir-fry the vegetables
In the same pan, heat 2 tablespoon olive oil. Add the remaining garlic and onion.
Stir-fry until fragrant, then add the carrot, red pepper, choi sum and woodier mushrooms.
Stir-fry for a minute then pour in half the mixed sauce and stir to coat the veg.

Add sauce and noodles
Add the noodles and remaining sauce.
Stir everything together and cook for another minute.

Combine and serve
Return the cooked pork mince to the pan.
Stir well to combine and heat through.
Serve hot with siracha, roasted peanuts and crispy fried shallots on top.
