Over a decade ago, the Japanese chain Pizz 4P arrived in Vietnam, and it was nothing short of phenomenal. Their unique concept captivated diners, and the quality of food on their menu kept people coming back for more. I was among those regulars who couldn’t get enough of their delicious offerings. Among their dishes, two starters stood out for me: the Mozzarella and Tomato Salad and the Parma Ham Wrap.

This simple Parma Ham & Wild Rocket Roll recipe is my take on their Parma Ham Wrap. It’s a non-cook recipe that’s as quick to prepare as it is delicious, making it a perfect starter for any special occasion.

Why wild rocket?

Wild rocket has always been a favourite of mine, thanks to its peppery flavour, which perfectly balances the richness of Parma ham. Paired with creamy ricotta cheese, it creates a delightful bite that’s light yet indulgent.

This recipe only requires a handful of ingredients, yet each one brings its unique touch to the dish:

  • Parma ham: This special ham from the Parma region of Northern Italy is renowned for its sweet, nutty flavour. If you can’t find Parma ham, any Italian-style cured ham can serve as a substitute.
  • Wild rocket leaves: Easily found in supermarkets, wild rocket offers a strong, peppery flavour that elevates this dish. I love these leaves and use them in a lot of my dishes, from salads to pizzas and sandwiches.
  • Ricotta cheese: With its smooth yet slightly grainy texture, ricotta is the perfect base for the rolls. If unavailable, cottage cheese works as a good substitute.
  • Black pepper: Adds a touch of spice to enhance the ricotta’s flavour.
  • Salt: Optional, as the saltiness of Parma ham might suffice. Add only if needed.

How to make Parma Ham & Wild Rocket Rolls

This recipe is so simple that it can be whipped up in a few minutes, leaving you more time to enjoy your gathering. Here’s how to do it:

1. Prepare the ricotta cheese

In a small bowl, mix the ricotta cheese with freshly crushed black pepper to create a smooth, flavourful paste. Ensure there are no lumps for an even spread.

2. Assemble the rolls

  • Lay a slice of Parma ham flat on a plate or clean surface.
  • Spread a thin layer of the ricotta mixture evenly over the ham.

  • Place a small handful of wild rocket leaves at one end of the ham slice (the slide closest to you).

3. Serve

    • Lay a slice of Parma ham flat on a nap late or boards. 
    • Spread a thin layer of ricotta cheese evenly over the ham. 
    • Place a few wild rocket leaves at their edge closest to you. 
  1. Roll it Up
    • Gently roll the ham slice away from you until it forms a neat roll. 
    • Repeat with the remaining ingredients. 
  1. Serve
    • Arrange the rolls on a serving platter.
