I must not be alone in my love for pineapple. Whether it’s fresh on its now, added to sweet and sour dishes, or used in desserts, pineapple is a favourite ingredient in my kitchen. Since treating myself to an air fryer, I find myself making air-fried pineapple pudding more often. It’s incredibly quick and easy yet still delicious, especially when paired with a scoop of vanilla ice cream.

With just three ingredients and about 20 minutes, you can have a warm fragrant pudding ready to serve.

Choosing your pineapple

Start with a ripe pineapple to enhance the natural sweetness of the dish. Cut the skin off and slice the pineapple into rounds about 1cm thick. This thickness ensures the pineapple retains a satisfying texture. Any thinner, and it may lose its structure during cooking; any thicker, and it won’t absorb the flavours as well.

The secret to perfect caramelisation

Dark brown sugar is key ingredient, adding a rich, deep sweetness. However, it tends to clump and can be tricky to sprinkle evenly. Ground cinnamon comes to the rescue here, serving two purposes. First, it adds a warm aromatic flavour. Second, when mixed with the sugar, it coats the grains, making them easier to separate and sprinkle evenly.

Mix the dark brown sugar and ground cinnamon thoroughly in a small bowl. The result will be a fragrant mixture that’s ready to coat the pineapple slices.

Preparing the pineapple slices

Once your pineapple rounds are ready, lay them flat in a single layer on a large plate. Sprinkle the sugar-cinnamon mixture generously over one side of the slices. Flip them over and repeat on the other side to ensure an even coating. I love this step, especially when my little daughter Summer is in the kitchen helping me sprinkle the mixture – it’s such a lovely moment to share.

Cooking in the air fryer

Line the air fryer basket with baking paper to save yourself from scrubbing sticky sugar residue later. Arrange the pineapple slices in a single layer, making sure they aren’t overlapping.

Set the air fryer to 240°C and cook the pineapple for 10 to 12 minutes. Keep an eye on the slices, and when you see a beautiful caramel colour starting to appear, it’s time to flip them. Cook for another 5 to 6 minutes on the other side, checking for that same golden caramel hue. Every air fryer is slightly different, so watch closely to avoid overcooking.

Serving the air-fried pineapple pudding

Once the pineapple is done, the aroma alone will have everyone in the kitchen! I like to chop up a slice and pair it with a scoop of vanilla ice cream. Serve the pudding warm for the best experience. The combination of the caramelised pineapple with the creamy ice cream is just heavenly.

Instructions

  1. Prepare the pineapple by removing the skin and slicing into 1cm-thick rounds.
  1. In a small bowl, mix the dark brown sugar and ground cinnamon until combined.
  1. Coat each pineapple slice on both sides with the sugar-cinnamon mixture.
  1. Line the air fryer basket with baking paper and arrange the pineapple slices in a single layer.
  1. Air fry at 240°C for 10-12 minutes, flip, and cook for another 5-6 minutes, or until caramelised.

  • Pineapple selection: choose a ripe pineapple for a maximum sweetness. A ripe pineapple will have a golden yellow skin and a sweet aroma at the base.
