While the peaches are simmering, brew your tea. I usually go for black tea – Lady Grey is my personal favourite – but feel free to use what you have on hand. Steep the tea bags in freshly boiled water for about 10 minutes then remove them and let the tea cool slightly.
Extract the peach goodness
Once the peach slices have softened and the syrup smells heavenly, I use a wooden spoon to gently smash the fruit in the pan. Then, I strain the mixture through a sieve into a large jug. Be sure to press the fruit against the sieve to get every drop of that delicious peach juice.
Mix and chill
Now it’s time to combine the two: pour the peach syrup into your tea and give it a good stir. Let the mixture cool to room temperature then pop it in the fridge to chill completely.

- Wash, peel, stone and slice 5 peaches.
- Add to a saucepan with honey and 500ml water.

Make a Peach Syrup
- Bring to a gentle boil, then simmer on low heat for 15 minutes.
- Use a wooden spoon to gently smash the peaches to release flavour.

Brew the Tea
- While the peaches are simmering, steep the tea bags in 1 litre of boiling water for 10 minutes.
- Remove tea bags and let the tea cool.

- Pour the peach syrup through a fine sieve into a jug, pressing down on the fruit to extract all the juice.
- Mix with the tea.

- Let the tea cool to room temperature then chill in the fridge for at least an hour.
