A refreshing, fruity drink for hot summer days

Today I’m sharing one of our absolute favourite summer drinks at home – Strawberry Lemonade. It’s the kind of drink that satisfies your thirst in the most refreshing way and looks as gorgeous as it tastes. When the weather gets warm and you’re after something sweet, fizzy and fruity, this Strawberry Lemonade ticks all the boxes.

It’s also a brilliant drink to make when you’re hosting. Whenever it’s a family BBQ, a garden party or just a sunny afternoon catch-up with friends, this is the summer drink you’ll want to have ready in a jug, chilled and sparkling.

Why we love this Strawberry Lemonade

This easy drink recipe is made with just a few ingredients, all of which you probably already have in the kitchen, especially in summer. Strawberries are in their prime – red, ripe and sweet – and they’re perfect for making a light, fruity base. When paired with citrus and mint, the flavour becomes vibrant and so, so refreshing. And the colour…just look at it! It’s always a crowd-pleaser.

Ingredients

You will need:

  • Strawberries – Who wouldn’t love strawberries, especially at this time of year? Rinse them well and drain in a colander. If they’re small, just cut them in half. If they’re big, quarter them so the juice releases easily.
  • Fresh mint leaves – I grow mint and lots of herbs in our garden and it’s such a joy to use them in our everyday cooking and drinks. Mint adds a lovely cooling note.
  • Ice cubes – The more, the better!
  • Lime and lemon slices – Slice them thinly. I like to use both for their different citrus aromas and the extra pop of colour.
  • Sprite or lemonade – You can use the full fat Sprite or the sugar-free version, depending on your preference.

How to make this Easy Strawberry Lemonade

Start by placing your strawberries and mint leaves in a large bowl. Using a fork or a pestle (or even the end of a rolling pin), give them a quick mash – just enough to release the juices but not turn everything into mush. You want some texture.

Transfer the mixture into a large jug, then top with plenty of ice cubes. Pour the Sprite or lemonade over until the jug is full. Gently stir, then drop in the lemon and lime slices.

That’s it – your homemade Strawberry Lemonade is ready to pour. Serve immediately, preferably with a few more mint leaves on top and a reusable straw for extra charm.

Tips and serving ideas

  • You can make a large batch and chill it in the fridge for an hour or so before serving. Just wait to add the ice cubes until you’re ready to serve.
  • This also makes a fun base for a party cocktail – a splash of vodka, rum or gin turns it into a grown-up summer drink.
  • If you’re avoiding fizzy drinks, swap Sprite for sparkling water and a dash of honey or agave syrup for sweetness.

  1. Rinse and drain the strawberries well, then cut into halves or quarters depending on size. 

  1. Place the strawberries and mint leaves in a large mixing bowl. Using a fork or pestle, gently mash them to release the juices, no need to over do it. 

  1. Transfer the mixture to a large jug. 

  1. Add plenty of ice cubes and pour in the Sprite until the jug is full. 

  1. Drop in the lemon and lime slices. Give it a gentle stir and serve straight away.

Note

  • For a stronger fruit flavour, let the mashed strawberries sit in the fridge for an hour before adding the rest.
