A sunny impulse turned into the tastiest snack

It was one of those lovely, impulsive moments today. The sun finally came out, and I felt like making something fruity and fun. Normally, I’d just chop up a few fruits and spoon over some yoghurt, which is fine, but it felt a bit too boring for such glorious weather. So instead, I reached for the rice paper wrappers and decided to make something a little more exciting: Fruit Summer Rolls.

The result? Beautiful, colourful, and oh-so-refreshing Fruit Summer Rolls that looked as gorgeous as they tasted. I whipped up a quick yoghurt and honey dip and that was it – fruity heaven on a plate! The rolls had everything: the soft sweetness of mango, crisp apple sticks, juicy strawberries and kiwi and a lovely hint of mint. Dipped into the sweet and tangy yoghurt sauce, it was hands down the tastiest (and healthiest!) snack I’ve made in ages. Honestly, I could see these being the perfect pudding for a summer dinner.

Easy, versatile and no cooking needed

The best part about these Fruit Summer Rolls is how easy and versatile they are. You don’t need to cook a thing – just wash, slice, roll and eat! You can pretty much use whatever fruit you’ve got on hand. Today I used what we already had in the fridge, and the whole thing came together in less than 15 minutes. In fact, it probably took us less time to eat them than to make them. My husband and our little daughter even had to battle for the last roll after dinner.

What I used today

Ingredients
  • Apple and mango: I sliced them into long, thin sticks, which made up the base of the rolls. I imagine honeydew melon or pineapple would work beautifully, too.
  • Strawberries and kiwi: I picked these for their vibrant colours and juicy bite. I sliced them thin so they’d show through the rice paper – makes the rolls look extra stunning.
  • Fresh mint leaves: These give the rolls a fresh, summery touch.
  • Rice paper: I used this type, which is specially meant for summer rolls; it’s light, slightly chewy and perfect for wrapping all the juicy goodness.

How to roll

I start by dipping a sheet of rice paper in a bowl of water, then laying it flat on a clean surface. First, I place the mango and apple sticks closer to me on the paper. Then, a little further up the sheet, I add slices of strawberries and a couple of mint leaves – this way, when I roll it up, the vibrant fruits and mint end up on display, just beneath the surface of the wrapper.

How to roll

You can do the same with kiwi, or mix kiwi and strawberry together in one roll – totally up to you.

The dipping sauce

I simply stirred a few spoonfuls of yoghurt with a generous drizzle of honey. That’s it. Creamy, sweet, tangy – the perfect dip to go with the fresh fruits. And when you dip those rolls into the yoghurt and honey? You just know you’ve made something really special.

Instructions

  1. Prepare the fruits
    • Slice the apple and mango into thin sticks.
    • Slice the strawberries and kiwis into thin rounds
  1. Soften the rice paper
    • Dip one rice paper sheet into a bowl of water. 
    • Remove it immediately and lay it on a clean surface. 
  1. Assemble the rolls
    • Place a few sticks of apple and mango near the bottom edge of the rice paper. 
    • Add a couple of slices of strawberry or kiwi and a couple of mint leaves slightly further up the sheet, so they'll be visible once rolled. 
    • Roll gently but firmly, folding in the sides as you go. 
  1. Repeat
    • Continue with the rest of the rice paper sheets and fruit. 
  1. Make the dip
    • Mix the yoghurt and honey in a small bowl. 
  1. Serve
    • Dip the fruit summer rolls into the yoghurt and honey sauce and enjoy immediately.
