Yes, you heard it right – this is tofu, and it’s pudding! Silken, light and paired with sweet ginger syrup, this dessert is utterly divine. Every spoonful takes me back about 30 years to my childhood. Around lunchtime, the “tofu pudding man” would walk his bike around our estate, shouting “Tao Pho” to announce his arrival. His bike carried a bucket of warm tofu pudding at the back and a basket of tools at the front. The neighbourhood would rush out, bowls in hand, to buy some.

Those memories inspired me to recreate this simple yet heartwarming dessert, and let me tell you, it’s just as magical today.

Only four ingredients, yet pure bliss

Ingredients

You only need four ingredients, and the cooking time is just a few minutes. Simple doesn’t mean boring though, this dish is full of flavour and nostalgia.

I used to make soy milk from scratch, which was time-consuming, but I’ve since discovered that carton soy milk works beautifully and saves so much effort. As for setting the tofu, I choose to use vegan agar powder. It’s foolproof, and it feels just right for a pudding like this.

The syrup is made from dark brown sugar and fresh ginger thin strips, creating the perfect balance of sweetness and warmth.

Making Silken Tofu Pudding

Start by pouring a full 1 litre carton of soy milk into a saucepan. Add 1 teaspoon of agar powder, stir well, and bring it to a boil over medium heat. Keep stirring to prevent the milk from sticking to the pan. Agar powder only works its magic at about 95°C, so wait until the soy milk starts bubbling before turning off the heat.

Pour the mixture into a large bowl and let it cool at room temperature. It’ll take about 3 hours to set. During summer, I pop the bowl in the fridge once it’s cool, as this pudding is especially refreshing when served chilled.

Note: Once the pudding sets, you might notice that the top doesn’t look as silky as you’d expect. Don’t worry, underneath lies perfectly smooth tofu. Just use a flat spoon to remove the thin top layer, and you’ll reveal that signature silken texture.

Making the ginger syrup

Combine water, dark brown sugar, and fresh ginger strips in a small saucepan. Bring it to a boil, and voila – your syrup is ready.

Serving the pudding

To serve, use a flat spoon to gently scoop thin layers of the silken tofu into a bowl. Pour the warm ginger syrup over the tofu, making sure to include a few ginger strips for that delightful, spicy kick.

In summer, the chilled tofu pudding with sweet syrup is refreshing and light. In winter, the warm version feels like a cosy hug, thanks to the gingery warmth.

Instructions

  1. Prepare the Silken Tofu
    • Pour the soy milk into a saucepan. Add the agar power and stir well until fully combined. 
    • Bring the mixture to a boil over medium heat, stirring continuously to prevent sticking. 
    • Once the soy milk starts bubbling, turn off the heat. 
  1. Set the Tofu
    • Pour the mixture into a large bowl and let it cool to room temperature. 
    • Allow it to set for about 3 hours. For a chilled version, refrigerate once cool. 
  1. Make the Ginger Syrup
    • In a small saucepan, combine dark brown sugar, water, and ginger strips. 
    • Bring to a boil and simmer for 3-5 minutes. Remove from heat. 

     

  1. Serve the Pudding
    • Remove the thin top layer if it doesn't look silky - it's smooth underneath. 
    • Use a flat spoon to scoop thin layers of the silken tofu into serving bowls. 
    • Pour the ginger syrup over the tofu, adding a few ginger strips for extra flavour.
